12 Days of Christmas... Day Three

Another batch of sweets I made the other night during my baking kick.  I got this recipe off another blog but modified it slightly.  If you are a fan of a coffee, chocolate and minty combination, these are for you.

Mint Cappuccino Crinkles


1/3 c. butter, softened
1 cup brown sugar
2/3 c. cocoa powder
1 T. instant coffee crystals
1 tsp. baking soda
1 tsp. cinnamon
2 egg whites
1/3 c. vanilla yogurt
1 1/2 c. flour
1/4 c. granulated sugar
1 bag Andes mint baking chips

1. Preheat oven to 350 degrees.
2. In bowl, beat butter.
3. Add brown sugar, cocoa powder, coffee, baking soda and cinnamon.  Beat until combined.
4. Beat in egg whites and yogurt until combined.
5. Beat in the flour.
6. Add mint baking chips and mix well.
7. Put the 1/4 c. granulated sugar in a separate bowl.
8. Roll the dough into 1-inch balls and roll in the sugar to coat well.
9. Place cookie balls onto ungreased cookie sheet and bake for 8-10 minutes.
